Seven Layer Southwestern Salad

¾ cups sour cream
1 ½ cups thick and chunky salsa
1 can black soy beans
1 can canelinni beans (or Great Northern beans)
1 large green bell pepper, diced
grape tomatoes
spinach
1 cup shredded cheddar cheese (or Pepper Jack)
Blue corn chips

Mix sour cream and salsa.

Drain and rinse beans.

Layer beans, bell pepper, tomatoes, and spinach. Top with sour cream/ salsa mix and cheese. Eat with blue corn chips.

(Add cooked chicken if desired.)
