1 cup white rice
3 bell peppers (1 red, 1 green, 1 yellow)
1 cup cubed fresh pineapple
1 can black beans, rinsed and drained
1 cup salsa
Cook rice as directed on package. Spray large skillet with cooking spray; stir-fry peppers until crisp-tender. Stir in pineapple, black beans and salsa, heat through. Serve over cooked rice.
